William Bernard (Billy) Himmelrich was born in Baltimore Maryland on July 27th, 1963. He graduated from The Taft School in Watertown, CT and Emory University in Atlanta, GA with degrees in Economics and French Literature. After 2 years in the banking business with JP Morgan in Manhattan, he moved to Paris, France in 1987 where he received 2 culinary diplomas and worked for 3 different Michelin Three Star chefs. He returned in 1989 to Washington, DC and worked in several premier restaurants before opening his first bakery and cafe, the Stone Mill Bakery, in Baltimore in 1991 and married Shelly. He grew the business, started a family, and sold the business (which still thrives) 8 years later to move to Florida in 1999. He lives in Gulf Stream with Shelly and their 2 sons Max and Charlie.
Upon moving to Florida Billy promptly purchased the struggling Old School Bread Company at 105 East Atlantic Avenue in Delray Beach in August of 1999. He grew the business by focusing on the wholesale delivery of bread with unparalleled quality 365 days a year. The bakery quickly outgrew the Atlantic Avenue location and Billy purchased the 105/111 East Atlantic building as an investment in 2003 through DHBH Atlantic LLC. He moved the bakery½ mile away to 45 North Congress Avenue and the bakery recently purchased this Congress property under an SBA “owner occupied” program.
The Old School Bread Company thrives today with upwards of SO employees and over 250 wholesale customers from South Miami to North Palm Beach. Their customer list includes many icons such as Joe’s Stone Crab, The Fontainebleau, The Breakers, Cafe Boulud, and many others of equal renown. DHBH manages the East Atlantic Avenue property that remains fully leased and had been a model for many projects in Delray Beach.
